Fermenting
Cereal flour can be mixed with water and left for two-three days. Fermenting cereals allow more iron, zinc and calcium to be absorbed.

Germinating
Seeds can be soaked in water for one day and than covered with a damp cloth for two days. The sprouted seeds can be dried and than milled to make germinated flour. This type of flour does not thicken much during cooking, so less water needs to be used. Germinated flours allow more iron, zinc and calcium to be absorbed. If a little of this flour is added to warm thick porridge [view consistency of porridge], it makes it soft and easy to eat.
